Williams on Wine Recipe: Chinese Chicken Thighs with 2008 McRitchie Winery Fallingwater

A fun wine, fun winery and fun dish – and very simple. Sean McRitchie, the winemaker at McRitchie Winery & Ciderworks, oversaw planting 180 acres at Shelton Vineyards in Dobson and helped lay the foundation for that massive winery before opening his own.

Sean is now making a Chardonnay, Merlot, a Sangiovese blush, and both a red and white blend. The white blend is called Fallingwater and is a thirst-quenching summer sipper.
 

The predominant grape is Traminette, a hybrid that is cousin to Gewurztraminer. There is also some Riesling and Chardonnay in the blend. Finally, McRitchie added a splash of Niagara.
 

"I like working with Traminette. It's a good grape. It comes off very clean, has some real good floral characteristics to it and has some spice," McRitchie said. "I remember when that fruit came in. It was beautiful, like beautiful glossy marbles. And the smell of perfume is just everywhere in the winery."
 

Try the wine with the dish below.

Ingredients:

* 8 chicken thighs

* 3 cloves garlic

* ¼ cup sesame oil

* ¼ cup chopped cilantro

* ¼ cup peanut oil

* 2 teaspoons fresh ginger

* ¼ cup soy sauce

* 2 teaspoons red pepper flakes

* ¼ cup Fallingwater (or other white wine)

Directions:

* Combine all the ingredients (except chicken thighs) in a food processor. If marinade is too thick, it can be thinned with a little more white wine.

* Put marinade in heavy duty zip lock bag. Add chicken thighs and marinate overnight.

* Grill over hot coals for about 10 minutes on each side.

* Baste with remaining marinade.
